In this hands-on class, you will prepare traditional sushi, two classic Japanese side dishes, and miso soup while learning the fundamentals of Japanese home cooking. **Miso Soup & Dashi** We begin by making dashi (Japanese soup stock) from scratch, using kombu (kelp) and bonito flakes. You will learn how this essential broth forms the foundation of many Japanese dishes. Using freshly made dashi, you will prepare authentic miso soup and understand how to balance its delicate flavors. **Sushi Rice & Sushi Making** Next, you will prepare sushi rice, learning how to properly season and mix it to achieve the perfect texture and shine. Once the rice is ready, you will make: • Nigiri sushi (hand-pressed sushi) • Sushi rolls You will practice shaping techniques, knife skills, and presentation tips so you can recreate beautiful sushi at home. **Traditional Japanese Side Dishes** You will also prepare two popular Japanese side dishes: • Spinach with Sesame Dressing (Horenso no Goma-ae) Fresh spinach is lightly blanched and dressed with a rich, homemade sesame sauce. You will learn how to achieve the perfect texture and balance of sweetness and nuttiness. • Japanese Rolled Omelet (Dashimaki Tamago) A soft, slightly sweet omelet flavored with dashi. Sushi Making Experience with Two Side Dishes & Miso Soup

Join our authentic sushi making experience in Sumida City, Tokyo, conveniently located near Asakusa, and discover the fundamentals of traditional Japanese home cooking in a fun, hands-on setting. This 2.5-hour class begins with preparing dashi (Japanese broth) from scratch using kombu (kelp) and bonito flakes. You will then use the freshly made broth to create authentic miso soup while learning about the importance of umami in Japanese cuisine. Next, you will prepare perfectly seasoned sushi rice and learn how to make both nigiri sushi and sushi rolls with step-by-step guidance from our instructor. You will also prepare two classic Japanese side dishes: • Spinach with sesame dressing (Goma-ae) • Japanese rolled omelet (Dashimaki Tamago) Throughout the experience, you will use traditional Japanese cooking tools such as a bamboo rolling mat (makisu), a wooden sushi rice tub (Handai), and a rectangular omelet pan designed specifically for dashimaki tamago. The class accommodates up to 12 participants, ensuring a friendly and interactive atmosphere. For larger groups, alternative venues may be arranged upon request. All ingredients, cooking tools, and aprons are provided for use during the class. You will receive printed recipes to take home so you can recreate all the dishes in your own kitchen. No prior cooking experience is necessary.
